Make sure you do the following before launching Genshin impact:
1) connect your controller to the iPad/iPhone via Bluetooth 2) update Genshin impact on the Apple App Store and in the App So 2 download updates. 3) launch game , go to settings controls then controller

(1) Connect controller via Bluetooth
(2) Open Genshin Impact
(3) Go to setting and you'll see option of controller
I also test on Android phone as well, it doesn't work currently. I guess it will support in the near future.
