If you actually want the answer to the raiden shogun as it is a bit spoilery I'll put in the comments
Raiden shogun also known as Ei had a sister named makoto. Both of them were gods but makoto was the actual ruler of inazuma while Ei hid in the background and acted as makoto's blade.
During a calamity makoto died and Ei took up the position of Raiden Shogun and the reason you see two of her constantly is because Ei put her mind inside a puppet robot type thing that actually rules inazuma and Ei meditates most of the time in that red realm you see her sitting in.

MC is not self insert. He/she is a character in the game like others. You don't think of Zhongli or Klee as yourself, so you shouldn't think of the Traveler this way. The only difference between the Traveler and other characters is we as players see their journey through their eyes. The Traveler folow a script of a story and can do or say things you wouldn't and you could dissagree with them or with their's actions. They are like a main character in a book. You can associate yourself with them while reading, but they have their own personality, can make their own decisions and their aren't self insert.

Zhong Li… you can just try calling him John Lee. Just try to make the "Jo" in John sound like Joe. it'll be much better than calling him Jonga Lee.
In Chinese superstition, there's one where if you sneeze more than 3 times or so in a row, someone is talking about you behind your back. No idea if they're talking good things or bad things about you though. There's a similar one where it's the back of your ear itches but I don't remember if it's from the Korean or Japanese.

That's not cat ears. It's fox ears. Tengu, Oni, Kitsune. All 3 are Youkais in Japanese folklore. They are either used to scare children, explain the unexplainable, or a symbol of worship. All these originate from way back and they often use them to explain earthquakes, thunderstorm, bad harvest, missing people, etc.

The "horny" girl is an oni – a type of mythical non-human being from Japanese folklore, the are supposed to have horns. The other two with Raiden are tengu (the dark-haired dude, a raven spirit/demon) and a kitsune (the white-haired girl, a fox spirit).
As simply as I can put it, there is Ei, the puppet, and Makoto
Ei = The Raiden Shogun we know, who enforced the Vision Hunt Decree (This is the first Raiden Shogun we fight, and you do it twice during the game's main storyline)
— Sitting at the picnic and meditating
Puppet = A puppet created by Ei, who some people in the fandom call "the Shogun". (This is the second Raiden Shogun we fight later in the game (this is what you mentioned when you noticed there were two Raiden Shoguns. The puppet is the more powerful looking Raiden Shogun)

Makoto = Ei's older twin sister, who died 500 years prior. (A bit more info in-game)

It's important to remember that Genshin Impact is a Chinese game, not a Japanese game. So like with Fischl and Venti's demos/teasers, you're hearing Chinese not Japanese.
So for the Raiden's Character Tale…. those are her closest friends. Saiguu Kitsune (a Fox Youkai), (I don't remember the Oni Girl's name, sry) A Japanese Oni, and a Tengu… they are Inazuman-based spirits styled after the Japanese Youkai….. Kujou Sara is a Tengu as well…. and Yae Miko is a Kitsune (fox spirit). For Yae Miko, her Ult animation shows five tails, indicating that she has lived for five hundred years, based off the Japanese belief that Fox Spirits gain a tail for every hundred years they live for. So she is more than five hundred years old and younger than six hundred. Oni are basically Japanese Ogres…. Itto is also an Oni (hence the red horns and his pun of 'The One and Oni' [instead of one and only]
