EDIT: Yeah so uh Java just managed to beat the archery challenge but was only able to do so cause of Ningguang.

U can try to use the ball gadget (don't remember how it's called; u can buy it from Margaret in mondstadt). U can aim with that gadget, so theoretically it should work
Edit: this ball gadget was introduced in gaa event I think

You could try using the Wind-Blessed Harpastum gadget, not sure if it'll work though, but it's worth a shot. I think it could be bought at the seller in Mondstadt named 'Margaret' right in front of the Cat's Tail.
for the archery challenge, have you tried using the ball from last years summer event? you can buy it from the mondstadt souvenir shop but i dont know if it will do dmg to the dummies or not

im pretty sure yanfei's talent cause her to unleash a follow up attack if her charged atk crits, that what makes it hits the tree and probably produce woods out of it…
You could have teleported to the waypoint in the kamisato residence it’s closer to the shrine than the forest waypoint
I saw a dude doing this challenge with Kokomi on youtube. Maybe if u get Ningguan she will be able to shot the ones at the back? Also the hapastum from mondstad shop is a cool idea.
