The game's main story is available at any time though. It's far from finished, but you'll eventually get access to every main quest that was released during the updates. There's plenty to do for a new player anyway. Main story, side quests, world exploration…
It's not really an MMO. There are some multiplayer activities but they are quite limited. No PVP either. The game is focused on single player

Answering a few of your questions.
First, about recommendations. I highly suggest you go through the "Collected Miscellany" videos that are there. They are really in-depth mechanics of how the characters work, with just a sprinkle of lore in them. There's also the Teyvat Chapter Storyline Preview, which does say it contains spoilers, but the spoilers are not spoilers in any tangible way. It shows the essential roadmap of genshin, and the video was released, if I remember correctly, on the day of release itself.
Now, answers.
About co-op. Genshin supports upto 4-player co-op. It's essentially a single player rpg, with some co-op elements. You can do dungeons (called domains), farm certain bosses, or just explore in co-op. The game fighting mechanics are mainly elemental based, and all elemental reactions are fully functional in co-op. Co-op unlocks at AR16 (AR is Adventure Rank, your current level [not your character's level], which you increase by doing quests, farming for character building, exploration etc).
About bosses. Some bosses are domain locked, but most bosses are open-world. You can find them in specific places of the world.
Events, are sadly time-limited. A couple of them were story events (not the main story, which is completely always there, see below) which you can always watch on Youtube (I recommend Cat with Blue Hat's yt channel, he has summaries of the story events with cutscenes). Other events, though you might have missed them, have a chance of coming back, so stay tuned.
The main story is always available for playing. Sometimes the main story gets locked unless you ahve a certain AR, but that's easily achieved by exploration and side quests. The world is huge, and there's always little things to do here and there!
The boat thing you saw in "Midsummer Island Adventure" is a permanent addition to the game. You can roam the seas with the boat. Incidentally, according to rumors, the islands are coming back next patch! I think now would be a good time to get into the game if you want to enjoy the islands.
Also, about the musical instruments. You might have missed the events, but the instruments themselves are always available in the game for you to buy! There are currently 3 instruments in the game, 2 of which you can buy, and the third is currently in an event, so it will be available later in a shop. The music is also completely functional in co-op, that is, you can play the 3 instruments together with other players and make music!
Now the most confusing thing. You asked if we can get characters with in-game currency. Well… yes and no :p
I'll try my best to explain, but it's confusing by design. Genshin's world has a currency called Mora. This is what you buy/craft in-universe stuff with. Things like character levelling up exp books, some food, some raw materials for food etc. Things you can get in the world. That's what you use Mora for.
Characters are part of the universe, but getting them is not part of the universe, and hence cannot be done via Mora. You get characters using things called Fates. And there are 2 kinds of Fates, Acquaint Fate and Intertwined Fate. To understand why there are 2 types of Fates, you need to understand how the banners, or the lootboxes work.
So the lootboxes in Genshin are called Banners, and opening lootboxes are called Pulls. You pull on a banner to try your luck at getting characters/weapons. There are 3 types of banners. One is the "Standard banner" whose in-game name is currently "Wanderlust Invocation". This is a banner that never changes, only things are added sometimes. To pull on the standard banner, you use Acquaint Fates. Simple as that.
The other type of banner is the "Character Banner", which changes twice every patch (that has been the trend till date). These banners come with a new 5-star character and sometimes with an old 5-star character getting a re-run. Sometimes, there are also 2 character banners simultaneously, like we had Yelan+Xiao last banner (2 character banners), but now we only have Itto (1 character banner). This banner uses Intertwined Fates as pulls.
The last type of banner is the "Weapon Banner". It also changes twice per patch (till date), and features 2 5-star weapons, new or re-run. This banner also uses Intertwined Fates as pulls.
How do you get these fates (both types)? Both types of Fates are given as rewards for levelling up certain things in the world, that's one source. But the primary source is converting something called "primogems" to Fates. Both types of Fates cost 160 primogems per Fate. How do you get primogems? Well, doing almost anything in the game rewards you with primogems. Exploration, events, spiral abyss (an end-game content, where we try out our built characters), some web-events, redemption codes (before every patch, we have a livestream showcasing what is coming. Essentially a detailed discussion of the patch along with the version trailers. There we are given codes that we can redeem to get primogems) and others.
Well, since I am so deep into explaining, might as well explain the pity system of Genshin. Genshin's pulls work on a pity system. Every 10 pulls, you are guranteed a 4-star item (item refers to weapon or character) or better, soft pity at 9. In the "Character banner", you are guranteed a 5-star character at the 90th pull (hard-pity), but soft pity starts at around 75, so chances for a 5-star character increases at around 75 until you reach 90 when it's a 100% chance. Now this 5-star character can be the character on the banner with a 50% chance, and if so, then everything resets and you start again. If it's not (again with 50% chance), then you get one of the standard 5-star characters (Diluc, Keqing, Mona, Qiqi, Jean) and the next 5-star character you get will be the character on the banner, guranteed.
For the "Standard Banner", it's essentially the same pity system, except, you are not guranteed a 5-star character, but a 5-star item from the chosen "standard list" of 5 characters (Diluc, Keqing, Mona, Qiqi, Jean) and a few weapons. If it's a weapon, the next 5-stsr item will be a character, guranteed. If not, then everything resets.
The "Weapon Banner" is a bit more involved, since there are two 5-star weapons every banner. 80 pulls is the hard pity, and soft pity starts at 65. Suppose you want 1 weapon (A) more than the other (B). There's a system called the epitomized path. What you do is, you select A in this system. Then if you roll 2 weapons that are not A back-to-back, the third is guranteed to be A. If you get A before 2 Bs, then the whole thing resets. Chance of getting a weapon that is not A nor B is 25% (that is, getting A or B has a chance of 75%. Contrast this with 50% of the Character/Standard Banners).

About the story-
I'd say the story is very compelling. There's a lot of lore/story (if you like that sort of thing) but it can be confusing at times. Some of the recent Archon quests (main story quests) are really well done, especially the 2.7 one. The separate character story quests are also good.
As for the villains- there's too main factions- the Fatui and the Abyss Order. The villains can be compelling in their mystery, as no one knows their motives. As far as compelling villain characters, Childe/Tartaglia (a Fatui member and also playable character) seems to develop a rival dynamic with the main character and their character quest helps develop them, and the Raiden Shogun (not part of Fatui or Abyss Order) has some of the best character development.
Also- Visions are the amulets that grant people elemental power (and as mentioned in the trailers, represent people's ambitions)
for main story, you will face it in order. but for events you will need to wait for a re-run.
and Genshin is basically… a story-based single-player game that has co-op function for domain (dungeon) and boss fights. So its not MMO (because… its not "massive multiplayer").

If you've noticed the trailer is divided by two. It's because there are 2 kinds of content every update:
1. Main story/ character/ archon quests – These are in the game permanently.
2. Event quests/ event story quests – These are time limited but would expand more on the lore and main story quests. It's basically like an expansion of the main quests. It's skippable and it won't hurt the overall story but it digs really deeper.

The 2.8 trailer is coming out in about 2~ weeks and 2.8 will be released in 3~ weeks. The trailer always comes out with a reveal stream a week or 2 before the update.

You should play immediately because there's rumors of a rerun of the Midsummer Island pretty soon on ver2.8 update, and we most likely would get a new region too this year..

So everyone starts at the same spot regardless of when they start playing. The main difference will be that you have more stuff to do as you won't reach the end of what's available for a while. I played from day one and there used to be huge gaps of nothing especially between 1.0 and 1.1. Right now you have Mondstadt, Liyue, AND Inazuma to get through plus Enkanomiya and the Chasm…

10:35 little correction, Xiao is character form Liyue nation, the representation is taken from Chinese culture. The mask he wears has nothing to do with the Oni story because the Oni people can only be found in Japanese culture, Arataki itto form example. If in Genshin Impact they are within the scope of the Inazuma nation which is a representation of Japan. For description Xiao is Adeptus, He acts as the protector of the liyue people from evil creatures. Basically he works to exorcise evil spirits like an exorcist.
In the design of Xiao's mask, they referenced aspects of the masks traditionally used in exorcism rituals as part of Nuo (傩) folk religion.
