PRIMOGEM COOKIES
Makes 20~ Depending on how big you make ’em:
– 3 tablespoon SOFT butter or room temperature.. not melted, not frozen, SOFT butter is needed
– 2.5 tablespoon sugar
– 1 large egg
– 1 teaspoon vanilla
– lemon zest from 1 lemon
– 1/2 cup + 3 tablespoon all purpose flour
– 1/4 teaspoon baking powder
– salt
– blue raspberry jolly ranchers

STEPS
1. Cream butter and sugar until pale yellow / fully combined
2. Add in other wet ingredients (egg, vanilla, lemon) and combine as best as you can! (It’s okay if its a lil lumpy, took me around 4 minutes on medium-high speed)
3. Add in dry ingredients (all purpose flour, baking powder, salt) and mix until it comes together!
4. Roll out into 1/4 inch thickness and freeze for 15 minutes or until rock hard
5. Make your Primogem cutout on a cardboard by tracing it from your computer screen, or you can just sketch it out :)!
6. Cut out Primogem cookies on the dough using your cutout, use a sharp knife OR small box cutter/exacto knife, or fondant knife. You can roll out your extra dough again and freeze again, then cut out your pieces if you’ve ran out of room!
7. Bake cookies 350 Fahrenheit for 6 minutes
8. Smash jolly ranchers into small pieces and place them into the cookies that have been baked for 6 minutes. I find that a small thin layer works the best!
9. Bake the cookies with the jolly rancher centers for another 6 minutes at 350 Fahrenheit
10. LET IT COOOOL so the candy gets hard again, and enjoy!

  1. Jolly Rancher cookies!? That's wild. I imagine iced sugar cookies is what most people would go for if they were to make "Primogem Cookies," but I think Spitzbuben (a type of German Christmas cookie) would work well. Thin border, lots of jam exposed. You'd have to hunt down some bright blue jam though. It'd probably be some sort of novelty jam, since blueberry jam is purple 🤔
