Mondstadt may seem simple from a reaction point of view, but it has over 2000 years worth of history and it's just really interesting.
Also, the good thing is that we do get to see characters again! (Along with meeting new characters as well). The bad thing is that it only happens on events, hangouts and Character & Story Quests. Still better than never seeing them again tho.

I took a look at the playlist you are using and seems really good to get through the main story. I would suggest however to add a video before the perilous trail archon quest video and add a story teaser “Yakshas: the guardian adepti”. It is 2 min but will give you, imo, some much needed context for that quest.
The Traveler does go back and visit their friends from previous nations from time to time, but it's usually in temporary event content. Unfortunately, event content can be quite important but there's no way for new players to replay them yet. I watched them all on youtube (prior to 3.4 anyway – that's when I joined and I've played every event since then). If you want to react to them, there are a few between the Liyue chapter and the Inazuma chapter. I'll comment about them when you finish watching the Liyue chapter.
They have already showed the Abyss Prince/Princess before, they are the sibling you didn’t pick.
Also, La Signora is the 8th ranked of the 11 Harbingers. It does show it in the cutscene but it was laggy so it was kinda hard to notice.
Yeah ther prince/princess was more of a error on Genshin that was meant t change based on if you pick male or female. It won't be an issue in the rest of the story (so far lol)
Lol why is this happy go lucky music playing after Venti just got stabbed and you get knock out?. This is like the equivalent of at the end of infinity war they play Barney the dinosaur theme during the credits lol
I hope the playlist they're watching has story quests bc they'll definitely like diluc's and klee's stories. Also, it flows better with certain story quests and even event quests like the albedo "shadows amidst snow storms," event
If you want to know more about specific characters, the game releases Story Quests to feature specific characters. Some characters really only appear in events or Story Quests, Klee for example does not show up in the main Archon quest, but has her own Story Quest. Other characters like Fischl generally only show up in limited time events sadly. So I would recommend watching some of them if you want to know more about that character, some are more relevant and important than the others.
The princess/prince error is notorious in the community. I'm honestly surprised it hasn't been fixed yet. It's honestly got nothing to do with the story, its just a mix up with with audio lines.

These cut scenes were from an earlier game release. The gender confusion was fixed in later patches. If you play as Aether, then Venti and Kaeya speak of a princess. If you choose Lumine, then they speak of a prince.
You are correct to think of the prologue (aka Mondstadt) is being like a training arc for the real game.
I love the videos reacting to the Genshin story. The story is very complex and has many characters. So it's very interesting

canonically the brother is the main character. So the "princess" is correct but i think game wise it was a error
Despite Signora calling Venti an absentee Archon for not ruling over Mondstadt, it is probably the most peaceful one out of the seven nations. Venti may hate the idea of directly ruling over his nation but he has kept an eye on it ever since leaving the people of Mondstadt to rule themselves in the name of freedom. There have been a few times hes stepped in to take care of bigger issues/threats and well Mondstadt is still standing and doing amazing so clearly hes doing his job well.
The Fatui and Abyss Order are both very interesting groups who cause trouble sort of all over Teyvat.
Jean honestly lets Kaeya get away with a lot of stuff because he does get work done when it matters and is one of her most trusted friends and subordinates Naturally hes a very skilled knight as one of the Captains and incredibly smart and perceptive. He was adopted by the Ragnvindrs (Dilucs family) when he was a kid but that family umm.. fell apart and now they just sort of tolerate each other? Kaeya is an interesting person in a slightly complicated situation not public to most people and hed rather keep it that way. The persona you usually see is a mask made of charm and elegance and his is speech a mixture of facts and fiction. There arent that many people around whom hes willing to at least mostly drop the act. In reality hes a gentle, caring and thoughtful person, hes just a bit silly and likes teasing people. Also loves alcohol like a lot lot.
If only the source video showed more of the main boss fights and not just for the sake of dialogue because a lot of the magic and glow up in Genshin comes from it’s OST, specially the Boss Themes 😢
The flipflopping of the pronouns is actually just a bug from the game. It should be fixed now but this was recorded earlier when it was still bugging out I believe
Later story is not buggy anymore. Also prologue is just a prologue. Other regions quests end up sooooo much better. Hope you watch them too !

It's an editing mistake by the uploader of the video. They choose wrong subtitle. You see in the start of the game you can choose brother or sister. If you choose sister as your playable character then the sister Will in the journey to find brother. And the brother will obviously abyss prince. But if you choose brother as playable character then sister will be abyss princess and brother will be The one to find his sister. So in video editing the uploader mistake with subtitles of brother journey instead of sister journey. Otherwise everything will be same. So whenever you see sister it will be brother and whenever you see princess it will be prince.
diluc has one of the most tragic backstories along with kaeya. u should check out the genshin manga to read more on his backstory
Vision holders are the playable characters we have, they hold visions so they can wield the element that was given to them.
The character's stories are revealed in special quests (Diluc included), the most characters have the own stories in one form or another

So after watching these for a little bit, I'll take back what I said earlier about it being better to watch a condensed version. I see what they wanted now and this should be good. But I will say that some things should still be added, namely more character story quests, if not, all of them. Klee is someone they are really excited to see, but she isn't in any archon quest and therefore isn't in this playlist at all. Mona's story quest would be good to watch before watching "Unreconciled Stars," which is in this playlist. (Plus Klee's story quest is a requirement for Mona's) Albedo's story quest is literally a prequal to "The Chalk Prince and The Dragon," which is also in the playlist. Plus many questions they have about characters are answered in their story quests.
So to whoever is making this playlist, I really recommend adding story quests to it.
Razor's, Mona's, Klee's, and Albedo's should 100% be added. Diluc's, Jean's, and Venti's are good too and canonically take place before going to Liyue.
As for other nations' story quests, it's weird to have part 2 of some story quests in the playlist and not part 1. Xiao's is almost required for the Perilous Trail archon quest. Ayaka's and Yoimiya part 1 are required for archon quest progression. Even though they aren't plot relevant. So I guess they are skippable. But give good insight to their characters.
To Venti, his Gnosis is just a badge. A reminder of the "catastrophe" that happened 500 years ago. That's why I think he wasn't too bumped out to loose it.. Though, yes, Gnosis(s) are a big deal and loosing one is surely impactful
