Yes those festival events are in game, they are amazing! My favorite was definitely Lantern Rite with all the floating lanterns over Liyue. You'll get to experience next time now that you're back playing again!
The building area is your housing system. You can go crazy building stuff in there and you can put your characters in there too with you. Also pets ha ha
Worth noting, Visions don't change elements. Kazuha had his own Anemo vision at the time of that Story Teaser, he just gained possession of his friend's. However, if a person's ambitions align closely enough with a Masterless Vision, that Vision may activate in their hands. Such a thing is extremely rare, but not unheard of.

15:00 – Depending on versions and events, you'll see them in the world at different places at times.
38:00 – That is Scaramouche, he first appeared on Version 1.1 event. If you did the event quest then his dialogue will change when you meet him in this version. It's just minor and doesn't affect the major storyline but it's interesting.
I want to know the idiot who added a story teaser in this playlist. Bugs me everytime someone reacts to it.

The first "version trailer" was like one of the only few promotional videos of Genshin that features Lumine (the female twin) as the Traveler LMAO Most promotional videos have Aether (the male twin) as the Traveler (i.e. the main character), and fans almost believe that the canon Traveler is Aether the guy.
At the pace ur going i don't think u will ever catch up lol so u always got upcoming stuff to react to
Also unfortunately u don't see characters out and about in the open world. Pretty empty in that regard if there is no quest involved
the whiplash of the 2.1 trailer is always funny to me. War + shadowy organization manipulating the government for nefarious purposes immediately to oooo this is nice weather to have a cooking competition and festival 😀
17:09 that is gonna happen in the new event on November 2nd we are gonna be fighting with the Sumeru monsters on our team
1.6 and 2.8 version trailers show limited time events that take place in a new location that's inaccessible right now. Both took place in summer, so you could say they're the beach episodes of genshin, and while they're limited time events, i'm 100% sure we're gonna go there again in the next summer's event. It sucks they do limited time events because they always contain a LOT of character lore and development, foreshadowing of what's to come in the main quest for the next region, etc.
It's definitely fun to see new players who aren't even familiar with the game's features yet, like the housing system or the (frankly pointless) boat lol It's a permanent feature but I think outside of the summer event its use is really limited.
And Xiao is just a really misunderstood character in English, but so is Childe due to a MASSIVE mistranslation in the Liyue Archon Quest that basically says the opposite of what he means. Xiao is really closer to being "child-like" than he is to being edgy. Outside of fighting which is the only thing he has been taught to do he just doesn't quite know how to interact with people or understand why people would want to.
I want to see part 2, there were the most epic ones.
I'd actually really recommend NOT watching the videos on this playlist with that 2D animation style. They're all in-game cutscenes, and all contain big spoilers. The backstory of Kazuha's friend, for instance, is something you learn in game, and it can kinda ruin the emotional impact to see it out of context without getting there in the story. If the title of a video doesn't specify that it's a version trailer, character teaser, or character demo, it's most often full of spoilers.
(The "Lazzo" video on genshin's channel isn't shown in-game, but it's meant to be experienced after finishing Inazuma, and contains spoilers too)
