I think you're right about the nation locations. This is especially since we had a couple of events where Qiaoying Village, an unreleased area of Liyue, was talked about. It's said to be in the northwestern part of Liyue, and Liben told us it's common for people to pass through Qiaoying Village on their way to Fontaine. Since Celestia now has a 3D model instead of just being a 2D image constantly rotated to face us, I decided to figure out where it is. I viewed it from Stormterror's Lair and then from the northern border of Sumeru. It appears that Celestia is currently floating right above where we expect Fontaine to be. In Liben's most recent visit, he said the people of Fontaine keep saying "Judgment is coming" and with Celestia floating right above their heads, I don't blame them for thinking that.
4:18 – I kinda expect Snezhnaya to be bigger than Natlan to be honest, also covering the north-west part of what you assumed belongs to Natlan, but that's just my opinion.
Hi, if you have Sayu you can travel much faster when you are logged in, immediately switch to Sayu, point her in the direction you want to go and hold her skill, after Paimon finishes his line for the second time, immediately start pressing button to switch to another character (after 2s pressing character will actually switch), then log out, before being teleported back. And do the same thing again. This is how i travel outside.
There is a bug that u can (or used to be able to) use that let's you walk on infinitely outside bounds, you go near a place you can dive and wait for ur charaters idle animation. U press jump/ and you shouldn't move. You then open camera and swap between poses until your charater dives. Once they dive, press another pose and you can walk on infinitely in any direction, but once you walk there you can't stop/change direction without starting over hopefully this Is helpful.
There are some old "leaked" or alpha/beta maps of the game. Natlan is almost where you theorized it to be, just a bit more southwest, with a volcano and a dark/black beach on the south side of the continent. There is a waterfall area in Fontaine and also Celestia is also part of the map (how/why). There were also peculiar things such as Dark Castles and frozen watefalls.
I'd like to see you/someone redo this in a private server, i managed to fly all the way up to celestia (was gravely disappointed) when i played w a private server recently. There's no red out of bounds and no paimon!!
There are areas under development in Mondstadt like the Dandelion Sea for example, so yeah, you are right there.
As far as I understood, you got the locations of the 3 last regions right, there is also an unnoficial speculative map that was released and it has been accurate so far with Sumeru. We'll have to see if it's gonna be correct in regards to Natlan and Fontaine, probably will tbh. Now c'mon, Snezhnaya, cold, gotta be north no brainer there.
u can use Ninja Ripper tool for extraction all of the geometry that on your screen in directx, that could let you get all of the LOD meshes of map, that far away. With using this BUG you can get as close as it possible to this meshes and capture more of the geometry. It costs around 5-10$ on developer's parteon and also has a video example on yt channel of how to do that with genshin. And you would probably create a new genshin account because this program is integrating itself in rendering pipeline that could be detected as a cheat, but i did this twice with my second account like 2-3 month ago and it's still running witout any restrictions.

Dandelion sea where? I also wonder if the tornado thing is in Sumeru is called Mare Jivari or if iMare is in the large sand region.
