Recipe makes 4 Jumbo Guoba Cookies:
1/4 cup (55g) unsalted butter, soft and at room temperature
1/4 cup (50g) granulated white sugar
1 large egg
1 teaspoon (5ml) vanilla https://amzn.to/3vbQu3b
1 cup (120g) all-purpose flour https://amzn.to/3BLXhSo
1/2 (2g) teaspoon baking powder https://amzn.to/3LV1BDD
pinch of salt
3 tablespoon chocolate chips

Decoration:
4 stale large marshmallows
1 tablespoon melted dark/semisweet chocolate
1/2 tablespoon melted white chocolate

1. Start the cookie recipe: mix butter and sugar until pale and thickened with a hand mixer with a beater attachment, around 3-4 minutes on medium speed.
2 Add egg and vanilla, and mix until fluffed and doubled in volume, around 5-6 minutes on medium-high speed.
3. Add all purpose flour, baking powder, and a pinch of salt, and mix until incorporated (do not over mix) mix on medium speed for around 3 minutes.
4. Add in chocolate chips and mix with a spatula just until combined.
5. Divide the dough into 4 to make 4 jumbo Guoba cookies.
6. Take 1 of the dough and roll out to make a circular head and 2 ears. Press your cookie to a thickness of 1/3 inch, then with your thumb, press down to make an indent for the marshmallow. Repeat for the remaining 3 dough.
7. Freeze the dough and marshmallow together until solidified or frozen.
8. Bake in the oven at 350F for 12 minutes total, or until lightly browned at the bottom and marshmallows have turned a light brown color.
9. Once cooled, decorate the face details using melted chocolates.

  1. Yes it's true, i tested these with soft marshmallows and they just spread like crazyyy. The ones that were harder/staler in the pack held their shape the best and looked more like a cute nose!

  2. Me, my sister, and my cousin made these last night without a recipe and they turned out awesome! (Except the cookies squished together a bit but it’s fine)
