Depends on the preference of the player.
If one prefers a limited cluster of characters with the plot that focuses on the development of said characters and a very detailed development of secondary characters too, more recurrence of said characters, a dynamic combat and doesn’t mind the lack of an open world, then honkai is the game for you.
If one prefers more a world building focused storyline, a wider number of characters to see and get, a less intrusive protagonist, a storyline partly explained and partly hinted by scattered hints (books, artifacts, items, character lines), a wider, amazingly beautiful world design, more grind (artifacts), a less dynamic and varied combat play but with more elemental reactions, then Genshin is better for you.
The things that one might consider downsides of a game, might be the point that makes another like that game, and viceversa. And some just appreciate both, because we play each game for a different reason.

Genshin impact is a younger game than Honkai, as such Honkai was developed longer and Genshin still puts up a fight. Honkai beats him, but Genshin has more than enough potential to outmatch him eventually.

Majority, I would more prefer Genshin but still, both of them are actually very good too. They had their own charms in their own way but then again, I think I love Genshin more since I'm so in love with the characters inside them. Though, for now, I still laying in waiting for Honkai Star Rail
Tbh i find genshins combat for it not being a combat game kind of better just because in honkai u can like spam a button on one character and just like do nothing it doesnt feel as challanging as in genshin
he is lie, graphic is a lot better on honkai impact. play it on 4k, model, effect design and color design on genshin is below compared honkai. people mostly bias on genshin because its open world. a lot landscape to see compared to honkai closed space

And it could be preference but the few open world scenarios Honkai has, especially APHO, are easily on par with Genshin imo. But overall I like the darker sci fi aesthetic more
To be honestly honest (imo) i dont read honkai lore cuz they dont have cgi animation like genshin does lmao (so its a bit underwhelming and boring to read sometimes) also i prefer and enjoy doing story quest in genshin more bc we can explore the open world with nice view while doing the story quest. Honkai often force us to use their trial character meanwhile genshin don't (not often). For co-op i prefer genshin obviously.
I like gacha in honkai. The rates are so good. I mean they are the same as genshin but I get more lucky and even f2p can catch up if they have enough savings.

I personally actually prefer genshins combat. I really think it's one of their strongest points.
