The great thing about the recent QoL is that Hoyo is now in the position to actually work on it. they have HSR (a much easier game to develop) where they can test those QoL then if it's received well they implement it on Genshin (a game that takes alot of time to develop because it's open world)

To be fair chevruse being a pole arm user instead of a bow user kinda makes sense since she's a guard and if you've ever seen any movie tv show or anime alot of the guards all wield Spears in their hands when on guard duty
Bruh, you do realize that if they made her a bow, they would have to rework every single character to use a gun. And also it makes sense for Chevreuse to be a polearm as she is a guard.
